A few posts ago I made that delicious Pumpkin Gooey Cake. At the time, Kroger only had the large can of pumpkin and I only needed half. Not sure of pumpkin puree’s shelf life, I figured I’d better make something from the leftovers.

I frequent Smitten Kitchen for ideas (and I love her blog). She had this fabulous recipe for  pumpkin muffins. I didn’t have the right amount and types of muffin wrappers so I had a Tim Gunn “make it work” moment.

And look how pretty they turned out:

The kids loved them too.

Some small, some big, all good.
